Oreo cheesecakes.

Friday, 6 March 2015
I'm no expert at baking, truth be told anything that involves an oven usually ends up going wrong. If you often have this problem then stick to making cheesecakes, I'm getting pretty good at them now.

Introducing the Oreo cheesecakes!
I got the original recipe from which has currently become a frequent read for me and their recipe makes 4 ramekins of cheesecakes. However I doubled my mixture to make 8. I will put up the ingredients and method for 4 and if you want to do the same as me then you can!

You will Need.

8 Oreo cookies.
50g butter.
250g Whipping cream
225g Soft cream cheese
1 teaspoon of vanilla extract
4 tablespoons of sugar
1 teaspoon of lemon juice.

1. Take 8 Oreos and either crumble them in a food processor or pop them in a freezer bag and smash them with a rolling pin. A food processor would be quicker but the rolling pin is definitely more fun and gets out any anger you may be harbouring?
2. Melt the butter and mix in your biscuit crumbs to make the base of your cheesecakes.
3. Evenly space out your biscuit base into your ramekins and set to one side.
4. Next take the whipping cream and whisk it until it is fully whisked and stiff peaks form. (Which I did not do because I'm impatient and had already covered the kitchen in cream with the electric whisk)
5. Then in another bowl add the soft cheese, vanilla extract, lemon juice and sugar and mix together until it's a smooth texture. After this you can then mix your cream cheese mixture with your whipping cream and spoon into the ramekins on top of your biscuit base.
6. With the left over oreos you can crumble them over the top of the cream and add an oreo for decoration.
7. Pop them in the fridge and keep them refrigerated for whenever you next want a treat!
